I have heard some restore guys say you need to put a seal on the marble floor when complete with the honing/polishing/buffing? some say not. What do you think? Thanks

Hello, yes, it should be sealed regardless honed, polished or buffed. Unfortunately a sealer has limited protection, it intended to protect from stains soaking into marble surface, but it won’t protect from etches, scratches and minerals/salts soaking from underneath upward.
It might be more important for new grout as it more/same porous than marble. Since a sealer is not much expensive and can be easy applied it is worth to use it.
